Southern Style Collard Greens

Ingredients
- 1 smoked ham hock
- 1 large yellow onion, thinly sliced
- 2 small garlic cloves, thinly sliced
- 4 to 5 cups chicken broth
- ½ cup apple cider vinegar
- several dashes hot sauce
- ½ tsp. salt
- ½ tsp. fresh ground pepper
- 4 lb. collard greens, stems removed, sliced into 1 inch strips
Steps
- In a large Dutch oven over medium heat, heat the oil. Add the onions and ham hock and saute 8-10 minutes, until onions are brown and wilted. Ad the garlic and cook 1 minute. Add broth, vinegar, hot sauce, salt and pepper and stir well. Bring to a rolling boil. Add collard greens, stirring well. Return to boil, then reduce heat to low, cover, and simmer 35-45 minutes, or until soft and pale green. If you like them really soft, cook even longer. Taste, adjust seasoning, and serve with some of the liquid. Pass hot sauce at the table.
