Baked Brown Rice

This is the best method for cooking rice reliably. Takes longer, but it's worth it if you have the time.
- 2 cups brown rice
- 4 cups water
- ½ tsp. salt
- Place rice in strainer and rinse under cool running water. Heat a stainless steel or cast iron skillet over low head and add rice. Dry roast the rice for 3 minutes, stirring occassionally, until rice is dry and aromatic.
- Preheat oven to 225 degrees. Place roasted rice in a pot. Add the water and salt and cover with a lid. Bring to a boil on the stovetop. Transfer rice to a covered casserole dish and bake, covered, in pre-heated oven for one hour, or until water is absorbed and rice is tender.
