Jicama Citrus Salad

Ingredients
- 1 medium jicama, cut into 1 inch cubes
- 4 radishes, thinly sliced
- 1 to 2 oranges
- 1 avocado
- 1 Tbsp. red onion or shallot, diced
- ½ lemon
- 1 lime
- ¼ tsp. cumin
- ½ tsp. dijon mustard
- salt and pepper
- baby spinach, for serving.

Steps
- Supreme the orange(s) into the salad bowl. Squeeze the juice of the orange into the dressing bowl. Set aside.
- With the orange segments, mix the jicama, radishes and avocado.
- Make dressing- mix together the orange juice with the juice of ½ lemon and 1 lime. Mix in cumin, mustard, onion or shallot, salt and pepper. Whisk in a couple tablespoons of good olive oil. Taste and season.
- Pour dressing over salad. Sprinkle with chopped cilantro and toss. Serve over a bed of baby spinach, if you want.
