Jicama Citrus Salad

  1. 1 medium jicama, cut into 1 inch cubes
  2. 4 radishes, thinly sliced
  3. 1 to 2 oranges
  4. 1 avocado
  5. 1 Tbsp. red onion or shallot, diced
  6. ½ lemon
  7. 1 lime
  8. ¼ tsp. cumin
  9. ½ tsp. dijon mustard
  10. salt and pepper
  11. baby spinach, for serving.
  12. olive oil


  1. Supreme the orange(s) into the salad bowl. Squeeze the juice of the orange into the dressing bowl. Set aside.
  2. With the orange segments, mix the jicama, radishes and avocado.
  3. Make dressing- mix together the orange juice with the juice of ½ lemon and 1 lime. Mix in cumin, mustard, onion or shallot, salt and pepper. Whisk in a couple tablespoons of good olive oil. Taste and season.
  4. Pour dressing over salad. Sprinkle with chopped cilantro and toss. Serve over a bed of baby spinach, if you want.
