Method for Cooking Fresh Shell Beans

This is the best preparation for beans with tuna- from the Saveur Rome edition.
- A bunch of shelled beans.
- 1 onion
- 1 bay leaf
- 5 peppercorns
- A few sprigs of thyme
- Slice off stem of onion and score slits all over it. Place the onion in a large pot with the herbs and spices. Fill with 3 quarts of water (enough to generously cover), and bring it to a boil. Reduce heat and simmer 20 minutes.
- Add the beans and simmer until cooked through, about 15 minutes. Drain, and reserve cooking liquid.
- If eating alone as just beans, toss with 1 Tbsp olive oil and enough reserved cooking liquid to moisten. Season with Salt and pepper to taste.
