Method for Cooking Fresh Shell Beans

Introduction

This is the best preparation for beans with tuna- from the Saveur Rome edition.

Ingredients

  1. A bunch of shelled beans.
  2. 1 onion
  3. 1 bay leaf
  4. 5 peppercorns
  5. A few sprigs of thyme

Steps

  1. Slice off stem of onion and score slits all over it. Place the onion in a large pot with the herbs and spices. Fill with 3 quarts of water (enough to generously cover), and bring it to a boil. Reduce heat and simmer 20 minutes.
  2. Add the beans and simmer until cooked through, about 15 minutes. Drain, and reserve cooking liquid.
  3. If eating alone as just beans, toss with 1 Tbsp olive oil and enough reserved cooking liquid to moisten. Season with Salt and pepper to taste.
