Kale, Turkey, and Red Kidney Bean Soup

A few weeks ago, I was served a delicious bowl of soup at a Southern restaurant. Sundays are the time I crave Southern dishes, but my goal these days is to create healthier recipes. The restaurant’s soup was a light combination of white beans, kale and smoked turkey. I remembered the recipe and tried to imitate it at home. Switching a few ingredients, I created a meatier, heartier version, but the kale is the star of this dish. The time of prepping to serving it is instantaneous. It’ll make a great weekday and lunch meal.
