The Oyster Roast

(recipe, Fred Thompson)

  1. 1 bushel of oysters, rinsed and scrubbed
  2. Your favorite cocktail sauce
  3. Melted butter
  4. Lemon wedges
  5. 8 leather garden gloves
  6. 8 oyster knives
  7. Lots of paper towels

  1. Oil the grill racks. Preheat your grill using all burners set on high and with the lid closed for 10 to 12 minutes.
  2. Place as many of the oysters in a single layer as you can over your grill grate. Get your condiments close to the grill on another table and make sure everyone has put on their gloves. Have 8 aluminum pie pans available, if you like, to use as plates. As the oysters start to open, usually after about 15 minutes, encourage everybody to dig in, opening their oysters and topping them with their favorite condiments. Continue cooking the oysters in batches until they’re gone. Any oysters that don’t open should be discarded.
