Introduction

Pav is Indian soft bread and bhaji means mashed vegetables. Popular street food (especially in Mumbai) is quick to make at home for breakfast, lunch, dinner or evening meal. Pav bhaji is one of the most loved street food/fast foods of India. This favorite dish is one of the best food idea to keep family/friends happy and can be served in potluck, party or any get together too. Ingredients

  1. 1 medium chopped onion
  2. 120 g cauliflower florets
  3. 60 g of peas
  4. Salt to taste
  5. 2 chili finely chopped
  6. 2 Tbsp. butter
  7. 2 medium potatoes
  8. 1 medium carrot
  9. 3 medium chopped tomatoes
  10. Dinner rolls
  11. 1½ Tbsp. tomato ketchup
  12. 35 g of cilantro leaves
  13. 1½ tsp. kashmiri red chili powder
  14. ½ lemon
  15. 1½ Tbsp. olive/vegetable oil
  16. 1 small finely chopped bell pepper
  17. 1 tsp. dried fenugreek leaves
  18. 1 tsp. chaat masala
  19. Pinch of asafetida (hing)
  20. 2 Tbsp. pav bhaji masala
  21. 1½ ginger-garlic paste

Steps

  1. Step 1
  2. Heat pan on medium heat, add 1 ½ tbsp oil and 1 tsp butter. To this add 1 finely chopped onion. Sauté for few minutes. Add ginger-garlic paste and chopped green chili. Stir for 2 minutes, add chopped tomatoes and salt to taste. Cover it and cook until tomatoes turn soft.

  4. Once tomatoes are soft, add finely chopped bell pepper/capsicum, 1 tsp red chili powder and 1 tbsp pav bhaji masala. Cover it again and let bell pepper turn soft. Now add boiled vegetables (cauliflower, carrot and green peas). Stir and mash all vegetable until mushy. Add 2 medium boiled and mashed potatoes. Mash everything well with masher add some vegetable stock/water in which you boiled vegetables. Mix well and add tomato ketchup. Give it good mix.

  6. Make a well in the centre (the way street vendor does). Now add 1 tsp butter in the centre, pinch of hing, some dried fenugreek leaves, ½ tsp kashmiri red chili powder and 1 tbsp pav bhaji masala. Mix well and add rest of the vegetable stock. Stir well and cook it covered for 2 minutes. Garnish with cilantro leaves and add some lemon juice. Top bhaji with butter and serve warm with pav, chopped onion, lemon wedge.
