Hot Chocolate with a Water Base

No milk handy? This water-based drink is a great alternative hot chocolate from Chuck Siegel of Charles Chocolates.


  1. 4 cups cold water
  2. ½ cup sugar
  3. 9 oz. bittersweet chocolate (70 percent cacao), chopped
  4. ½ cup Dutch-process cocoa powder


  1. In a medium saucepan, bring water and sugar to a boil, stirring to dissolve the sugar. Add the chocolate and the cocoa and mix with a whisk to dissolve. Heat until just simmering, then remove from heat.
  2. Use an immersion blender (or a regular blender with a towel held tightly over the lid) to froth the hot liquid for one minute. Serve in small mugs.
