Baked Tilapia

(recipe, Maura Berger)


Easy & quick for any busy night. (Also works for boneless chicken breast)


  1. Tilapia
  2. Store bought pesto (I love the one carried by BJ's- I do not dilute it)
  3. Chopped Tomato (a can of diced tomatoes is fine if fresh is not available)
  4. fresh basil (optional)
  5. splash of white wine (optional)


  1. Preheat oven to 400*
  2. Spray your baking dish with cooking spray
  3. Brush the dish with Pesto
  4. Place tilapia in pan (or boneless chicken) -brush the top with more pesto
  5. Cover with some diced tomato - if fresh basil available- sprinkle some on top
  6. You can put a splash of white wine over (not necessary - but optional)
  7. Bake at 400* for 15 minutes (Tipalia) an extra 5-10 minutes for chicken (depends on thickness)
