Cream of Spinach Soup

Ingredients

  1. 5 to 6 cups baby spinach
  2. 1 cup yellow onion chopped
  3. 2 cloves garlic chopped
  4. 2 cups whole milk
  5. ¾ cup goat milk Feta cheese
  6. 1 + cups fresh baguette bread crumbs (use food processor to break down baguette)
  7. 2 Tbsp. olive oil
  8. Salt and pepper to taste (lots of pepper, less salt--feta is quite salty)
  9. 1 Tbsp. fresh dill minced

Steps

  1. Sauté onion and garlic in olive oil until translucent
  2. Add spinach and continue cooking until wilted
  3. Add breadcrumbs, milk, feta, salt, pepper, and dill
  4. Cook for additional 5-6 minute until feta begins to melt
  5. Pour into blender, blend until smooth
  6. Pour into clean pot and heat for 7-8 minutes until thickened
  7. Eat!
