Cream of Spinach Soup

Ingredients
- 5 to 6 cups baby spinach
- 1 cup yellow onion chopped
- 2 cloves garlic chopped
- 2 cups whole milk
- ¾ cup goat milk Feta cheese
- 1 + cups fresh baguette bread crumbs (use food processor to break down baguette)
- 2 Tbsp. olive oil
- Salt and pepper to taste (lots of pepper, less salt--feta is quite salty)
- 1 Tbsp. fresh dill minced
Steps
- Sauté onion and garlic in olive oil until translucent
- Add spinach and continue cooking until wilted
- Add breadcrumbs, milk, feta, salt, pepper, and dill
- Cook for additional 5-6 minute until feta begins to melt
- Pour into blender, blend until smooth
- Pour into clean pot and heat for 7-8 minutes until thickened
- Eat!
