Puttanesca

Introduction
This is a basic puttanesca recipe.
Ingredients
- 1 bunch green onions, chopped
- 4 to 5 garlic cloves, chopped
- 3 to 4 Tbsp. olive oil
- 1 28.0 -oz can Roma tomatoes
- 1 to 2 cans of anchovies (in water)
- 3 to 4 Tbsp. capers
- ¼ -cup sherry or port
- chopped Italian parsley
Steps
- In a deep straight-sided skillet, sauté onions and garlic in oil until soft
- Add tomatoes and cook down a bit
- Add anchovies and capers
- Add wine and cook until the sauce thickens
- Before tossing with cooked pasta, add chopped parsley
