Puttanesca

Introduction

This is a basic puttanesca recipe.

Ingredients

  1. 1 bunch green onions, chopped
  2. 4 to 5 garlic cloves, chopped
  3. 3 to 4 Tbsp. olive oil
  4. 1 28.0 -oz can Roma tomatoes
  5. 1 to 2 cans of anchovies (in water)
  6. 3 to 4 Tbsp. capers
  7. ¼ -cup sherry or port
  8. chopped Italian parsley

Steps

  1. In a deep straight-sided skillet, sauté onions and garlic in oil until soft
  2. Add tomatoes and cook down a bit
  3. Add anchovies and capers
  4. Add wine and cook until the sauce thickens
  5. Before tossing with cooked pasta, add chopped parsley
