Is going gluten-free a fad or a sign of serious dietary change? Maybe a little of both. As CBS News recently reported, a new study shows that celiac disease and other gluten-tolerance problems are actually on the rise, and not just because doctors are diagnosing them more often. The problem may be due to our modern diet's emphasis on processed wheat products, or it may be due to the Green Revolution in grain hybridization, way back in the 1950s, that increased grain yields worldwide. Either way, more people are trying to cut out gluten — and more companies are rushing to produce gluten-free convenience snacks.
