Ingredients

  1. For the Pork:
  2. 1½ lb. boneless country style pork ribs
  3. 1 cup tart cherry juice
  4. 1½ cups water
  5. 1 small onion (sliced)
  6. 2 Tbsp. brown sugar
  7. salt & pepper
  8. For the sauce:
  9. 1 cup reserved braising liquid
  10. ½ cup ketchup
  11. 3 Tbsp. brown sugar
  12. 2 Tbsp. tamarind chutney
  13. 1 Tbsp. Siracha or hot sauce
  14. ⅛ tsp. liquid smoke
  15. 1 Tbsp. ground black pepper
  16. ¼ cup red wine vinegar

Steps

  1. Layer crock pot with sliced onion
  2. In a separate pan brown pork on all sides (5-7 minutes)
  3. Put pork in crock pot and cover with water, brown sugar, cherry juice and water
  4. Cook on low 8-9 hours (while you are at work or the like)
  5. Come home from work to an insanely delicious aroma
  6. In a new pan place all the "sauce" ingredients and 1 C of braising liquid. Cook the mixture down for about 10 minutes, tasting, adjusting as desired.
  7. Remove pork from crock pot, discarding remaining liquid, add to sauce and cook on low for additional 35-45 minutes.
  8. Serve with cornbread and slaw, of course!
