BBQ Pulled Pork with Homemade Sauce

Ingredients
- For the Pork:
- 1½ lb. boneless country style pork ribs
- 1 cup tart cherry juice
- 1½ cups water
- 1 small onion (sliced)
- 2 Tbsp. brown sugar
- salt & pepper
- For the sauce:
- 1 cup reserved braising liquid
- ½ cup ketchup
- 3 Tbsp. brown sugar
- 2 Tbsp. tamarind chutney
- 1 Tbsp. Siracha or hot sauce
- ⅛ tsp. liquid smoke
- 1 Tbsp. ground black pepper
- ¼ cup red wine vinegar
Steps
- Layer crock pot with sliced onion
- In a separate pan brown pork on all sides (5-7 minutes)
- Put pork in crock pot and cover with water, brown sugar, cherry juice and water
- Cook on low 8-9 hours (while you are at work or the like)
- Come home from work to an insanely delicious aroma
- In a new pan place all the "sauce" ingredients and 1 C of braising liquid. Cook the mixture down for about 10 minutes, tasting, adjusting as desired.
- Remove pork from crock pot, discarding remaining liquid, add to sauce and cook on low for additional 35-45 minutes.
- Serve with cornbread and slaw, of course!
