Corn and Flaxseed Waffles

You would never guess when you take a bite that these lovely waffles are packed with heart-healthy omega-3 oils. Just enjoy the crunchy delicious flavors without the guilt.


  1. ½ cup corn flour (see Note)
  2. ¼ cup whole-wheat flour
  3. ¼ cup flaxseed meal
  4. 1 tsp. baking powder
  5. ½ tsp. baking soda
  6. ½ tsp. salt
  7. 1 egg, lightly beaten
  8. ½ cup buttermilk
  9. 1 cup plain yogurt
  10. 2 Tbsp. canola oil
  11. ¼ tsp. vanilla extract


  1. Preheat the waffle iron.
  2. In a large bowl, sift or whisk together the flours, flaxseed meal, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the egg with the buttermilk, yogurt, oil, and vanilla, then combine with the dry ingredients.
  4. Spoon the batter into the waffle iron and cook until golden.


Culinate editor's note: No corn flour on hand, just cornmeal? Use ¼ cup cornmeal and ¼ cup regular flour.
