Corn and Flaxseed Waffles

Introduction
You would never guess when you take a bite that these lovely waffles are packed with heart-healthy omega-3 oils. Just enjoy the crunchy delicious flavors without the guilt.
Ingredients
- ½ cup corn flour (see Note)
- ¼ cup whole-wheat flour
- ¼ cup flaxseed meal
- 1 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- 1 egg, lightly beaten
- ½ cup buttermilk
- 1 cup plain yogurt
- 2 Tbsp. canola oil
- ¼ tsp. vanilla extract
Steps
- Preheat the waffle iron.
- In a large bowl, sift or whisk together the flours, flaxseed meal, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg with the buttermilk, yogurt, oil, and vanilla, then combine with the dry ingredients.
- Spoon the batter into the waffle iron and cook until golden.

Culinate editor's note: No corn flour on hand, just cornmeal? Use ¼ cup cornmeal and ¼ cup regular flour.
