In a recent New York Times op-ed, Gary Taubes — already known for his contrarian takes on sugar, fat, calories, exercise, and dietchampioned the lowly salt molecule, declaring sodium chloride to have been unfairly maligned by the medical establishment: "Put simply, the possibility has been raised that if we were to eat as little salt as the USDA and the CDC recommend, we’d be harming rather than helping ourselves." Other health types, including food activist Michael Jacobson, begged to differ on the letters page. Who's right in this scientific kerfuffle? It's too soon to tell.
