Remains of the bird

(article, Liz Crain)

Did you roast a turkey this Thanksgiving? If so, did you throw the carcass in a stockpot the next day with herbs and vegetables, cover it with water, and simmer it down into a stock?

If not, Michael Ruhlman would like to see you in his office. Ruhlman's recent post about homemade stock urges — begs, actually — readers not to use the canned-excuse-for-stock on most grocery-store shelves:

bq. You DO NOT NEED to buy that crappy can of Swanson’s low sodium chicken broth! It will HURT your food. Use water instead.

Ruhlman follows this with a loose recipe for making the most of your bird leftovers. And if that turkey carcass has already hit the trash, don't sweat it; his instructions are applicable to any roast-chicken leftovers, too.
