Blueberry Sauce

  1. 2 cups fresh or frozen blueberries
  2. ⅓ cup water
  3. ½ cup granulated sugar
  4. ½ tsp. vanilla extract
  5. 1 Tbsp. lemon zest


  1. Combine all the ingredients in a saucepan over medium heat. Stir gently and bring to a boil. Reduce the heat and simmer for 10 to 15 minutes, stirring occasionally, until the blueberries have broken down and the sauce has thickened. Serve over pancakes or waffles.
