Chia Seed Pudding

This recipe is adapted from one by the endurance athlete Rich Roll and his wife, Julie Piatt.


  1. 2 Tbsp. cocoa powder
  2. 2 Tbsp. honey
  3. 8 Tbsp. chia seeds
  4. 1 cup peeled and cubed papaya
  5. 2 Tbsp. organic coconut oil
  6. 2 cups water or fruit juice


  1. Put all the ingredients in a food processor. Process for 3 minutes, stopping to scrape down the sides of the bowl. Adjust the honey and cocoa powder to taste.
  2. Pour into individual serving bowls and chill. Serve cold.
