Simple Roasted Chicken

This is a great way to prepare chicken that just about always works for me--great on the grill too!


  1. 1 four (or so) pound chicken
  2. Yellow onion
  3. Garlic
  4. Lemons (3 or 4)
  5. Thyme
  6. Rosemary
  7. olive oil
  8. Pink Salt
  9. Pepper


  1. 1. Preheat oven to 400 degrees
  2. 2. Cut the backbone out of the chicken (see Google if you need to know how to do this)
  3. 3. Flatten the chicken, breast side up, and crack those little ribs
  4. 4. Mince herbs and garlic
  5. 5. Zest 1-2 lemons
  6. 6. Mix herbs, garlic, lemon zest, salt, pepper,and 2 TB olive oil
  7. 7. Rub herb mixture under chicken skin (breasts, thighs, etc.)
  8. 8. Place chicken on baking sheet, breast side up (you may wish to add some potatoes, carrots, etc. arround chicken--if so coat these in a little oil oil)
  9. 9. Rub a little oil and salt on the exterior of the chicken
  10. 9. Cook for about 1 hour.
