Simple Roasted Chicken

Introduction
This is a great way to prepare chicken that just about always works for me--great on the grill too!
Ingredients
- 1 four (or so) pound chicken
- Yellow onion
- Garlic
- Lemons (3 or 4)
- Thyme
- Rosemary
- olive oil
- Pink Salt
- Pepper
Steps
- 1. Preheat oven to 400 degrees
- 2. Cut the backbone out of the chicken (see Google if you need to know how to do this)
- 3. Flatten the chicken, breast side up, and crack those little ribs
- 4. Mince herbs and garlic
- 5. Zest 1-2 lemons
- 6. Mix herbs, garlic, lemon zest, salt, pepper,and 2 TB olive oil
- 7. Rub herb mixture under chicken skin (breasts, thighs, etc.)
- 8. Place chicken on baking sheet, breast side up (you may wish to add some potatoes, carrots, etc. arround chicken--if so coat these in a little oil oil)
- 9. Rub a little oil and salt on the exterior of the chicken
- 9. Cook for about 1 hour.
