Spring Onion Goat Cheese Tartlet with Fresh Strawberries and Balsamic Glaze

Chef Dennis Callinan of William & Mary Catering demonstrated this recipe at the Williamsburg Farmers Market Chef Tent on May 21, 2011.
Ingredients
- 1 cup cream
- 2 eggs
- Salt & pepper to taste
- 1 nine-inch pie dough, perforated with fork
- 12 oz. goat cheese
- ½ bunch green onions, sliced & sautéed
- 1 Tbsp. chives, finely chopped
- ½ Tbsp. fresh thyme
- 1 cup strawberries, tops removed and quartered
- 1 Tbsp. sugar
- 1 Tbsp. balsamic vinegar
Steps
- Preheat oven to 300°
- Whisk together cream and eggs and season with salt and pepper
- Crumble goat cheese onto bottom of pie dough
- Spread sautéed onions over goat cheese
- Sprinkle chives and thyme on top
- Pour cream and egg mixture into dough
- Bake in preheated oven 30-40 minutes until toothpick comes out clean
- Cool before cutting
- Place strawberries and sugar in medium sauté pan over medium heat. Heat until sugar is dissolved
- Add balsamic vinegar until mixture becomes a glaze
- Spoon over cooled tartlet
