Farmer's Cheese Filling

I buy my farmer's cheese from a Polish store in Baltimore. If you can't find farmer's cheese at your local grocery, farmer's market, or Eastern European store, pick up some feta instead.


  1. 1½ cups farmer's cheese or feta cheese
  2. ½ tsp. sugar
  3. 2 eggs
  4. ¼ tsp. salt


  1. Mix all of the ingredients together. (The mixture will be fairly dry.)
  2. Use instead of sauerkraut to fill Sauerkraut Pierogi.
