Adam's Grilled Chicken

Ingredients
- 4 chicken hindquarters (serves 4)
- Brine:
- 3 Bay Leaves
- 1 Tbsp. White Pepper
- 3 Tbsp. Salt
- 1 Tbsp. Soy Sauce
- 2 Tbsp. Molasses
- Fresh Ground Pepper
- Cold water to cover in large bowl
Steps
- 1. Fire up the BBQ
- 2. Stir ingredients to dissolve salt, make sure meat is totally submerged, put in fridge 1 -2 hours
- 3. Rinse off the brine, pat dry, brush with canola oil & black pepper
- 4. Clean Grill and oil
- 5. Put chicken on the hottest part of the grill for 3 minutes per side
- 6. move off the heat, you want to cook them for 45 minutes at 200 degrees or so
- 7. Brush with BBQ Sauce. cook for a few more minutes, checking with a thermometer for 175 - 190 degrees
- 8. Pull off grill, cover for 5 minutes and serve
