Adam's Grilled Chicken

Ingredients

  1. 4 chicken hindquarters (serves 4)
  2. Brine:
  3. 3 Bay Leaves
  4. 1 Tbsp. White Pepper
  5. 3 Tbsp. Salt
  6. 1 Tbsp. Soy Sauce
  7. 2 Tbsp. Molasses
  8. Fresh Ground Pepper
  9. Cold water to cover in large bowl

Steps

  1. 1. Fire up the BBQ
  2. 2. Stir ingredients to dissolve salt, make sure meat is totally submerged, put in fridge 1 -2 hours
  3. 3. Rinse off the brine, pat dry, brush with canola oil & black pepper
  4. 4. Clean Grill and oil
  5. 5. Put chicken on the hottest part of the grill for 3 minutes per side
  6. 6. move off the heat, you want to cook them for 45 minutes at 200 degrees or so
  7. 7. Brush with BBQ Sauce. cook for a few more minutes, checking with a thermometer for 175 - 190 degrees
  8. 8. Pull off grill, cover for 5 minutes and serve
