Spicy Thai Peanut Dipping Sauce (for chicken satay)

Ingredients
- 2 Tbsp. (or less) vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 Tbsp. grated ginger
- ¾ cup smooth peanut butter
- 1 cup coconut milk
- ¼ cup chicken stock
- 1 Tbsp. sugar
- 2 Tbsp. soy sauce
- 2 Tbsp. fish sauce
- 1 tsp. chili garlic paste
- ½ tsp. pepper
Steps
- Heat oil and saute onion, garlic and ginger about 3 minutes. Whisk in the coconut milk, peanut butter, stock, sugar, soy sauce, fish sauce, chili paste and pepper. Simmer all until thickened and flavorful, about 5-10 minutes. Add more stock as needed.
- Serve with any grilled meat, especially chicken satay.
