Spicy Thai Peanut Dipping Sauce (for chicken satay)

Ingredients

  1. 2 Tbsp. (or less) vegetable oil
  2. 1 small onion, finely chopped
  3. 2 cloves garlic, minced
  4. 1 Tbsp. grated ginger
  5. ¾ cup smooth peanut butter
  6. 1 cup coconut milk
  7. ¼ cup chicken stock
  8. 1 Tbsp. sugar
  9. 2 Tbsp. soy sauce
  10. 2 Tbsp. fish sauce
  11. 1 tsp. chili garlic paste
  12. ½ tsp. pepper

Steps

  1. Heat oil and saute onion, garlic and ginger about 3 minutes. Whisk in the coconut milk, peanut butter, stock, sugar, soy sauce, fish sauce, chili paste and pepper. Simmer all until thickened and flavorful, about 5-10 minutes. Add more stock as needed.
  2. Serve with any grilled meat, especially chicken satay.
