Southern Skillet Cornbread

  1. 1 cup yellow cornmeal
  2. ½ cup flour
  3. 1 tsp. salt
  4. 1 tsp. baking powder
  5. ½ tsp. baking soda
  6. 1 cup buttermilk
  7. 1 egg
  8. ¼ cup bacon grease


  1. Place a greased cast iron skillet in the oven. Set to 400 degrees to preheat.
  2. Combine the dry ingredients.
  3. In a separate bowl combine the buttermilk, egg, and bacon grease. Add wet to dry mixture, mix well.
  4. Carefully remove the preheated skillet from the oven and pour in the batter. Bake at 400 degrees until golden brown.
  5. Allow to cool slightly before removing, it will come away from the pan easier. Cut with a sharp knife and run knife along the edge to loosen.
