Shrimp Curry

Ingredients

  1. 1 cup chopped onions
  2. 4 tsp. Olive Oil divided
  3. 1 green or red pepper, cut in strips
  4. 1 lb. uncooked, peeled shrimp
  5. 1 Tbsp. red curry paste
  6. 2 Tbsp. water
  7. 1 cup light coconut milk
  8. 1 tsp. curry powder
  9. 3 cups cooked brown rice

Steps

  1. 1. In large skillet, saute onions on medium in 2 t oil until carmelized ( 8 - 10 minutes)
  2. Meanwhile in another large skillet saute peppers and remaining oil on medium about 3 minutes
  3. Add the shrimp, cook for 2 - 3 minutes until they are opaque
  4. 2. In a blender, puree onions and curry paste with water until almost smooth. Add puree, light coconut milk and curry powder to shrimp. Bring to boil and cook uncovered (2 - 3 minutes) until it thickens slightly.
  5. Stir in the rice, stir to warm
  6. Nutrition per serving: 388 calories, 28 g protein, 12 g fat (3 sat), 43 g carbs, 4 g fiber
