Grilled Vegetable Sandwich

Ingredients

  1. Dressing:
1 cup plain nonfat yogurt
    3 tbsp dijon-style mustard
      freshly ground black pepper to taste
        2 tbsp nonfat cottage cheese
          1/8 tsp tabasco sauce
            2 tbsp minced shallot (1 small shallot)
              1 garlic clove, peeled and minced
                1 tsp freshly squeezed lemon juice
                1. 1 small eggplant, trimmed and cut into ¼ inch rounds
                2. 1 medium yellow squash, trimmed and cut into ¼ inch rounds
                3. 1 medium zucchini, trimmed and cut into ¼ inch rounds
                4. 1 red onion, trimmed and cut into ¼ inch rounds
                5. 3 tsp. italian seasoning
                6. ⅛ tsp. cayenne pepper
                7. light vegetable oil cooking spray
                8. 2 roasted red bell peppers
                9. 2 pizza dough baguettes
                10. 1 large tomato, sliced
                11. freshly ground black pepper to taste
                12. 2 Tbsp. chopped jalapeno pepper (1 large pepper)
                13. 8 fresh basil leaves
                14. 8 arugula leaves
