Glazed Pumpkin Cookies

Introduction

Mom found this recipe and it makes the best pumpkin cookies (not too cakey). It's also easily modified for Laura D.

Ingredients

  1. 1 cup butter, softened
  2. 1 cup suger
  3. 1 cup pumpkin puree
  4. 1 egg
  5. 2 cups flour
  6. 1 tsp. baking soda
  7. 1 tsp. cinnamon
  8. 1 tsp. salt
  9. 1 cup raisins
  10. For Glaze:
  11. ¾ tsp. vanilla
  12. 3 Tbsp. butter
  13. 4 tsp. milk
  14. ½ cup brown sugar
  15. 1 cup confectioners sugar

Steps

  1. Preheat oven to 375 and grease cookie sheets or line with silpat.
  2. Cream butter, sugar and pumpkin. Add the egg and vanilla and mix well. Add sifted dry ingredients gradually. Add raisins.
  3. Drop onto greased cookie sheet and bake 10-12 minutes. Cool a little and spread glaze onto warm cookies.
  4. For Glaze:
  5. Cook the butter, brown sugar and milk until all is dissolved on the stove. Cool a little. Add the vanilla and the confectioners sugar. Spread onto warm cookies.
