Zucchini Bread

Ingredients
- 2 cups grated zucchini
- 1 cup whole wheat flour
- 1 cup brown rice flour
- ½ tsp. salt
- ¼ tsp. ginger
- ½ tsp. cinnamon and nutmeg (preferrably a pumpkin pie mix)
- 2 eggs
- 1 tsp. vanilla
- ¼ cup agave
- ¼ cup soy/almond milk
- ¼ cup apple juice
- Chopped almonds
- Pepita seeds
Steps
- Preheat oven to 350.
- Grate zucchini.
- Mix wet ingredients.
- Slowly add in dry ingredients.
- Once mixed, add in nuts and seeds.
- Bake for 35-45 minutes.
