Zucchini Bread

Ingredients

  1. 2 cups grated zucchini
  2. 1 cup whole wheat flour
  3. 1 cup brown rice flour
  4. ½ tsp. salt
  5. ¼ tsp. ginger
  6. ½ tsp. cinnamon and nutmeg (preferrably a pumpkin pie mix)
  7. 2 eggs
  8. 1 tsp. vanilla
  9. ¼ cup agave
  10. ¼ cup soy/almond milk
  11. ¼ cup apple juice
  12. Chopped almonds
  13. Pepita seeds

Steps

  1. Preheat oven to 350.
  2. Grate zucchini.
  3. Mix wet ingredients.
  4. Slowly add in dry ingredients.
  5. Once mixed, add in nuts and seeds.
  6. Bake for 35-45 minutes.
