Healthy Cookies (Becca)

Ingredients

  1. ¾ cup organic peanut butter
  2. ½ cup oil extra light olive or canola oil
  3. 1⅓ cups fructose or organic raw sugar
  4. ½ cup un-sweetened coconut
  5. 3 organic eggs
  6. 2 t. vanilla
  7. 1 cup organic chopped toasted almonds (walnuts or pecans)
  8. 1½ t. baking powder
  9. ½ t. baking soda
  10. ½ t. sea salt
  11. 6 cups organic rolled oats
  12. 1½ cups carob chips or chocolate chips

Steps

  1. In a mixing bowl beat peanut butter, eggs, oil and fructose. Add remaining ingredients
  2. mixing in the carob or chocolate chips at the end. Spoon onto a cookie sheet, press
  3. together with fingers. (They tend to be crumbly) Bake 8 minutes at 350 degrees with
  4. fructose or 10 to 12 minutes with sugar. Transfer to a wire rack and let cool. Makes about
  5. 24 large cookies.
