Serve this refreshing side dish with Five-Spice Chicken Satay.
- ½ cup rice-wine vinegar
- ¼ cup water
- ½ cup granulated sugar
- 1 tsp. salt
- 1 cucumber
- 2 Tbsp. finely minced shallot or purple onion
- Combine the vinegar, water, granulated sugar, and salt in small saucepan. Bring to a boil and boil until the sugar dissolves. Remove from heat and let cool.
- Peel and seed cucumber and chop into ¼-inch dice. Pour vinegar mixture over cucumber. Stir in chopped shallot and serve.
