Cucumber Salad

Serve this refreshing side dish with Five-Spice Chicken Satay.


  1. ½ cup rice-wine vinegar
  2. ¼ cup water
  3. ½ cup granulated sugar
  4. 1 tsp. salt
  5. 1 cucumber
  6. 2 Tbsp. finely minced shallot or purple onion


  1. Combine the vinegar, water, granulated sugar, and salt in small saucepan. Bring to a boil and boil until the sugar dissolves. Remove from heat and let cool.
  2. Peel and seed cucumber and chop into ¼-inch dice. Pour vinegar mixture over cucumber. Stir in chopped shallot and serve.
