Cucumber Avocado Gazpacho

Ingredients

  1. 1 small avocado
  2. 1 cucumber, peeled and de-seeded, plus additional cuke for garnish
  3. 1 Tbsp. onion, minced
  4. 1 Tbsp. olive oil
  5. 1 Tbsp. lemon juice
  6. 1 Tbsp. apple cider vinegar
  7. ¼ tsp. celtic sea salt
  8. ¼ tsp. chili powder
  9. 1 cup water
  10. smoked paprika, to garnish

Steps

  1. 1. Throw avocado, cucumber, onion, oil, lemon juice, vinegar and water in Vita-Mix (or other high speed blender)
  2. 2. Puree on high speed until smooth
  3. 3. Blend in salt and chili powder
  4. 4. Serve, garnishing with extra cucumber cubes and smoked paprika if desired
