Vegetarian Thai Soup with Tofu

Ingredients

  1. 1 part chicken/veggie stock
  2. 1 part coconut milk
  3. Garlic to taste
  4. Chopped chives
  5. Lime juice to taste
  6. Grated lime zest
  7. Grated ginger to taste
  8. Mushrooms
  9. Broccoli
  10. Thinly sliced carrots
  11. Sprouts
  12. Chopped firm tofu
  13. Thai red curry paste - OR - red chili peppers - OR - 1 jalapeno pepper - OR - 1-2 tsp chili sauce - OR - ½ tsp dried crushed chili - OR - peanut satay sauce (Trader Joes)

Steps

  1. Heat on low stock, coconut milk, garlic, ginger, chives, lime zest and juice.
  2. After about 10 minutes or so, add all veggies and tofu.
  3. Let simmer on low for 10 more minutes or so.
