Vegetarian Thai Soup with Tofu

Ingredients
- 1 part chicken/veggie stock
- 1 part coconut milk
- Garlic to taste
- Chopped chives
- Lime juice to taste
- Grated lime zest
- Grated ginger to taste
- Mushrooms
- Broccoli
- Thinly sliced carrots
- Sprouts
- Chopped firm tofu
- Thai red curry paste - OR - red chili peppers - OR - 1 jalapeno pepper - OR - 1-2 tsp chili sauce - OR - ½ tsp dried crushed chili - OR - peanut satay sauce (Trader Joes)
Steps
- Heat on low stock, coconut milk, garlic, ginger, chives, lime zest and juice.
- After about 10 minutes or so, add all veggies and tofu.
- Let simmer on low for 10 more minutes or so.
