Tomato Carrot Soup

Ingredients

  1. 2 ripe tomatoes ($2.00)
  2. 2 carrots ($.20)
  3. 4 Tbsp. olive oil
  4. ½ medium onion
  5. 1 clove garlic
  6. ½ tsp. salt
  7. ¼ tsp. pepper
  8. 1 tsp. red pepper flakes

Steps

  1. In a blender, puree all ingredients except red pepper flake oil until very smooth. Top with a drizzle of red pepper flake oil and chopped tomatoes and onion, if desired.
