Balsamic Summer Quinoa Salad

Ingredients

  1. 1 cup quinoa
  2. 1 white summer onion
  3. ½ zucchini
  4. ½ summer squash
  5. ½ large orange sweet pepper
  6. Dressing:
  7. 2 Tbsp. balsamic vinegar
  8. 2 cloves garlic
  9. 1 tsp. oregano
  10. ½ tsp. salt
  11. ¼ tsp. pepper
  12. 3 Tbsp. extra-virgin olive oil

Steps

  1. To cook quinoa, rinse and place in a pot with 2 cups of water. Bring to a boil, then cover and simmer for 15 minutes. Fluff with a fork.
  2. Cut the onion, zucchini, squash and pepper into a small dice and place in a medium bowl.
  3. Add quinoa to vegetables and stir to mix.
  4. Combine dressing ingredients and pour over salad. Stir to coat.
  5. Cover bowl and chill.
