Balsamic Summer Quinoa Salad

Ingredients
- 1 cup quinoa
- 1 white summer onion
- ½ zucchini
- ½ summer squash
- ½ large orange sweet pepper
- Dressing:
- 2 Tbsp. balsamic vinegar
- 2 cloves garlic
- 1 tsp. oregano
- ½ tsp. salt
- ¼ tsp. pepper
- 3 Tbsp. extra-virgin olive oil
Steps
- To cook quinoa, rinse and place in a pot with 2 cups of water. Bring to a boil, then cover and simmer for 15 minutes. Fluff with a fork.
- Cut the onion, zucchini, squash and pepper into a small dice and place in a medium bowl.
- Add quinoa to vegetables and stir to mix.
- Combine dressing ingredients and pour over salad. Stir to coat.
- Cover bowl and chill.
