wilted kale salad with a creamy chipotle dressing

Ingredients

  1. For the wilted kale
  2. 2 heads kale
  3. 2 t salt
  4. 2 cups baby tomatoes, sliced
  5. 1 cup hulled hemp seeds
  6. For the dressing
  7. 2 avocados
  8. 1 chipotle peppers
  9. 3 Tbsp. olive oil
  10. 2 t agave
  11. 2 t lemon juice

Steps

  1. Remove the stems and then wash and cut the
  2. kale into small pieces. Place into a bowl, add salt and
  3. start to massage the kale until it wilts and takes on a
  4. ‘cooked’ texture.
  5.  Add the tomatoes and hemp seeds to the bowl
  6. and mix in by hand.
  7.  Blend all remaining dressing ingredients in a highspeed
  8. blender until creamy and mix into kale by
  9. hand.
