Georgia Grown Peach Salsa

Introduction
Georgia peaches make a delicious chunky salsa when blended with heirloom tomatoes and Vidalia onions.
Ingredients
- 4 Georgia peaches
- 6 heirloom tomatoes
- 1 Vidalia onion
- 1 banana pepper
- 1 cayenne pepper
- 1 t. vinegar
- 1 t. sea salt
- 1 lime, juiced
Steps
- Boil peaches for 10 minutes, remove skins and lightly mash.
- Boil tomatoes, peppers and onions together for 20 minutes.
- Mash tomatoes and peppers and stir with peaches into chunky sauce.
- Stir in vinegar, sea salt and lime juice to peaches and tomatoes.
- Chill.
- Serve with Chevre cheese.
