The May issue of Coastal Living magazine has a Q&A with Rick Moonen, a sustainable-fish advocate who's a chef in, of all non-fishy places, Las Vegas. His top three nonendangered fish species? Tilapia, black cod, and Arctic char. The mag's website also ran seafood recipes from Moonen's 2008 cookbook, Fish Without a Doubt.
