Stuffed Acorn Squash

Ingredients
- 1 acorn squash
- 1 large carrot, grated
- ½ apple, diced
- ½ cup barley, cooked
- Sunflower seeds
- Spinach, chopped
- Cinnamon
- Sugar/stevia
- Goat cheese
- Ghee
Steps
- Heat oven to 350.
- Cut acorn squash in half, scoop out seeds place face down on baking sheet, then bake for 30 minutes.
- Meanwhile, combine carrot, apple, spinach, cinnamon, barley, and sugar in a bowl.
- After acorn squash is done, add mixture, grate goat cheese over the top, and bake for 10 more minutes.
- Then feast with friends or family! Mmmmm!
