Stuffed Acorn Squash

Ingredients

  1. 1 acorn squash
  2. 1 large carrot, grated
  3. ½ apple, diced
  4. ½ cup barley, cooked
  5. Sunflower seeds
  6. Spinach, chopped
  7. Cinnamon
  8. Sugar/stevia
  9. Goat cheese
  10. Ghee

Steps

  1. Heat oven to 350.
  2. Cut acorn squash in half, scoop out seeds place face down on baking sheet, then bake for 30 minutes.
  3. Meanwhile, combine carrot, apple, spinach, cinnamon, barley, and sugar in a bowl.
  4. After acorn squash is done, add mixture, grate goat cheese over the top, and bake for 10 more minutes.
  5. Then feast with friends or family! Mmmmm!
