Fava Bean Dip aka Fake Guacamole

(recipe, Mary Altman)

Introduction

Fava beans have a creamy texture, and when pureed with typical guacamole ingredients, it's a wonderful local, seasonal, nutrient rich substitute for guacamole.

Ingredients

  1. Fava beans
  2. 1 tsp. olive oil
  3. Garlic, 2 cloves, diced
  4. Lime juice
  5. Cilantro
  6. Salt
  7. Pepper
  8. 2 Tbsp. plain goat cheese

Steps

  1. Blanche fava beans. Shell beans from the large pod. Peel off the second layer of skin, revealing a tiny, bright green bean.
  2. In a food processor, combine beans, olive oil, garlic, salt, pepper, lime juice and goat cheese. Add more water if needed to make it creamy.
  3. Serve as a dip, or as filling between grilled corn tortillas.
