Kale & Quinoa Salad

Ingredients

  1. Kale, massage until soft
  2. Beets, shredded
  3. Quinoa
  4. Carrots, shredded
  5. Green onions, chopped
  6. Olive oil
  7. Mustard
  8. Tamari (soy sauce)

Steps

  1. Make batch of quinoa. When almost ready, throw in shredded carrots and chopped green onions to finish cooking with quinoa.
  2. While quinoa is cooking, gently massage the kale until it's soft and put in bowl.
  3. When quinoa is done, pour mixture on top of kale salad to further soften the kale.
  4. Add shredded beets and salad dressing (olive oil, mustard, tamari) and mix.
