Kale & Quinoa Salad

Ingredients
- Kale, massage until soft
- Beets, shredded
- Quinoa
- Carrots, shredded
- Green onions, chopped
- Olive oil
- Mustard
- Tamari (soy sauce)
Steps
- Make batch of quinoa. When almost ready, throw in shredded carrots and chopped green onions to finish cooking with quinoa.
- While quinoa is cooking, gently massage the kale until it's soft and put in bowl.
- When quinoa is done, pour mixture on top of kale salad to further soften the kale.
- Add shredded beets and salad dressing (olive oil, mustard, tamari) and mix.
