I set my water bath canner on the stove filled about half with water. I turn the lid upside down over it and place a round cooling rack on it. I heat the water to around boiling and turn off the heat or in the dead of winter leave the heat barely on under the pot. I set my container of bread on the cooling rack, covered loosely with plastic wrap that has been sprayed with non-stick, and a kitchen towel. Works well for me.
