Chicken Stew with Smoked Paprika

  1. 1 medium onion, sliced
  2. 1 carrot, peeled and diced
  3. 1 rib celery, diced
  4. 8 bone-in chicken thighs, skin removed
  5. 1 15.0 oz. can diced tomatoes, drained (I never bother draining, just reduce the sauce at the end.)
  6. 3 Tbsp. smoked Spanish paprika (sweet)
  7. ¾ cup red wine
  8. salt & pepper to taste


  1. place onion, carrot and celery in the slow cooker
  2. Add chicken thighs, stacking them in two layers, bone side up.
  3. add tomatoes, paprika, wine, and salt to taste
  4. cover and cook over low heat for 5 hours or until chicken is very tender
  5. remove chicken and most of the tomatoes to a platter
  6. discard onion, carrot and celery
  7. bring liquid to a boil and reduce to less than 1 cup.
  8. Add pepper to taste
  9. Serve chicken with mashed potatoes and reduced braising liquid for drizzling.
