Ingredients
- Spicey Pecans:
- 1 cup Georgia pecans
- 1 tsp. Chili Powder
- dash of Cayenne Pepper
- ½ tsp. sea salt
- 3 tsp. Extra Virgin Olive Oil
- Dressing:
- 1 Tbsp. fresh squeeze orange juice
- 1 Tbsp. Extra Virgin Olive Oil
- 1 Tbsp. Balsamic Vinegar
- 1 Tbsp. Local Honey
- ½ teas. hot pepper flakes
- Salad:
- 1 head artisan lettuce
- 2 sweet potatoes, oven roasted
Steps
- Toss pecans in Chili powder, Cayenne, sea salt, and olive oil. Bake at 350 for about 8 minutes or until toasted.
- Combine 1 T. each of fresh squeezed orange juice, olive oil, balsamic vinegar, local honey.
- Add ½ t. hot pepper flakes, seeds removed.
- Whisk together.
- Bake sweet potatoes in oven until roasted.
- Rinse, drain and tear artisan lettuces into bite size pieces.
- Add oven roasted sweet potato, cut into bite sized pieces.
- Toss in spicy Pecans and dressing.
