Ingredients

  1. Spicey Pecans:
  2. 1 cup Georgia pecans
  3. 1 tsp. Chili Powder
  4. dash of Cayenne Pepper
  5. ½ tsp. sea salt
  6. 3 tsp. Extra Virgin Olive Oil
  7. Dressing:
  8. 1 Tbsp. fresh squeeze orange juice
  9. 1 Tbsp. Extra Virgin Olive Oil
  10. 1 Tbsp. Balsamic Vinegar
  11. 1 Tbsp. Local Honey
  12. ½ teas. hot pepper flakes
  13. Salad:
  14. 1 head artisan lettuce
  15. 2 sweet potatoes, oven roasted

Steps

  1. Toss pecans in Chili powder, Cayenne, sea salt, and olive oil. Bake at 350 for about 8 minutes or until toasted.
  2. Combine 1 T. each of fresh squeezed orange juice, olive oil, balsamic vinegar, local honey.
  3. Add ½ t. hot pepper flakes, seeds removed.
  4. Whisk together.
  5. Bake sweet potatoes in oven until roasted.
  6. Rinse, drain and tear artisan lettuces into bite size pieces.
  7. Add oven roasted sweet potato, cut into bite sized pieces.
  8. Toss in spicy Pecans and dressing.
