Rosemary French Onion Soup

Bluebird CSA Onions make a delicious and very nourishing onion soup for winter warmth. Use fresh rosemary from your CSA shares for added depth and flavor.


  1. 3 onions, thinly sliced
  2. ½ cup Red Wine, optional
  3. 4 cups, chicken or veggie stock or broth
  4. 4 cups beef stock or broth
  5. sea salt to taste
  6. ground pepper to taste
  7. 2 Tbsp. Balsamic vinegar
  8. 4 Tbsp. Extra Virgin Olive Oil
  9. Fresh Rosemary
  10. 6 thick slices Crusty French Bread
  11. 1 cup sliced Gruyere cheese
  12. 1 cup sliced Mozerella cheese


  1. Saute onions in stock pot until just turning brown in ev olive oil.
  2. Add wine and cook until evaporated.
  3. Continue cooking onions in wine sauce until deep brown in color.
  4. Add broths and simmer with onions for 1 hour.
  5. Season with salt and pepper and Balsamic Vinegar.
  6. Place 6 oven proof baking dishes on a baking sheet.
  7. Place bread slice in bottom of bowl and divide onion soup between bowls.
  8. Cover with cheese and Broil 1-2 minutes until cheese bubbles and browns.
  9. Garnish with rosemary and serve hot.
