Southern Caviar Collard Wraps

Like stuffed cabbage, these wraps are a delicious way to get 'All the Best' of healthy New Year's favorite dishes.


  1. 2 cups cooked wild rice
  2. 2 cups Southern Caviar (cooked Black Eyed peas in oil & vinegar dressing)
  3. 1 onion chopped, sauted
  4. 1 bell pepper chopped
  5. 12 whole collard leaves cooked
  6. Optional: 1 lb. ground sausage, cooked
  7. Garlic & Olive Dipping Oil


  1. Filling:
  2. Saute onions and bell pepper.
  3. Stir together cooked wild rice and Southern Caviar Black-Eyed Peas.
  4. Add cooked onions to rice and peas.
  5. Optional, Add cooked sausage.
  6. Boil collard greens until tender and flexible.
  7. Place 2 teaspoons of filling onto whole collard green leaf.
  8. Wrap and tuck in edges.
  9. Serve with Garlic & Olive Dipping Oil
