Fashoulakia (Green Beans)

Introduction

Ingredients

  1. 2 Tbsp. olive oil
  2. 1 cup finely chopped onion
  3. ⅓ cup finely chopped fresh parsley
  4. 1 Tbsp. finely chopped fresh mint
  5. 1 Tbsp. finely chopped fresh or 1 teaspoon dried dill
  6. 2 garlic cloves, minced
  7. 2 lb. green beans, trimmed
  8. ½ tsp. salt
  9. ½ tsp. black pepper
  10. 2 (14.5-ounce) cans stewed tomatoes, undrained

Steps

  1. Heat oil in a stockpot over medium-high heat. Add onion; sauté 3 minutes. Add herbs and garlic; sauté 4 minutes. Add beans and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 30 minutes or until beans are tender.
