Introduction

Ingredients
- 2 Tbsp. olive oil
- 1 cup finely chopped onion
- ⅓ cup finely chopped fresh parsley
- 1 Tbsp. finely chopped fresh mint
- 1 Tbsp. finely chopped fresh or 1 teaspoon dried dill
- 2 garlic cloves, minced
- 2 lb. green beans, trimmed
- ½ tsp. salt
- ½ tsp. black pepper
- 2 (14.5-ounce) cans stewed tomatoes, undrained
Steps
- Heat oil in a stockpot over medium-high heat. Add onion; sauté 3 minutes. Add herbs and garlic; sauté 4 minutes. Add beans and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 30 minutes or until beans are tender.
