Sausage & white bean soup

Ingredients

  1. I pkg turkey sausage (Italian links) casing removed
  2. 1 cup chopped onion
  3. 1 cup chopped celery
  4. 3 cloves garlic
  5. 1 cup of sliced carrots
  6. 2 cans chicken broth
  7. 1 can white (cannolini) beans rinsed
  8. 1 can diced tomatoes (and the juice)
  9. ½ cup of pasta (I used orrichette – little disk lite pasta)
  10. 1 tsp. each dried rosemary, oregano & basil

Steps

  1. Brown sausage meat & drain
  2. In the same pot (without cleaning) add some olive oil & cook down the onion, celery & garlic (10 minutes) Add carrot & cook on low for about 5 more. (don’t let the garlic burn)
  3. Add in the broth, beans & tomatoes – cook about 45 minutes
  4. Add dry pasta – cook about 20 more minutes or until the pasta is soft.
  5. *this was like a thin stew – not too much liquid – add another can of broth if you want it more soup like.
