Sausage & white bean soup

Ingredients
- I pkg turkey sausage (Italian links) casing removed
- 1 cup chopped onion
- 1 cup chopped celery
- 3 cloves garlic
- 1 cup of sliced carrots
- 2 cans chicken broth
- 1 can white (cannolini) beans rinsed
- 1 can diced tomatoes (and the juice)
- ½ cup of pasta (I used orrichette – little disk lite pasta)
- 1 tsp. each dried rosemary, oregano & basil
Steps
- Brown sausage meat & drain
- In the same pot (without cleaning) add some olive oil & cook down the onion, celery & garlic (10 minutes) Add carrot & cook on low for about 5 more. (don’t let the garlic burn)
- Add in the broth, beans & tomatoes – cook about 45 minutes
- Add dry pasta – cook about 20 more minutes or until the pasta is soft.
- *this was like a thin stew – not too much liquid – add another can of broth if you want it more soup like.
