Grandmas carrot cake

Ingredients
- 2 cups flour
- 1 0.5 cup sugar
- 4 eggs
- 4 carrots, grated
- 1 cup oil
- 1 cup raisins
- 1 cup chopped walnuts
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1 tsp. baking soda
Steps
- 350* for 1 hour
- Beat sugar & eggs till frothy. Add the rest of the wet ingredients. Beat in dry ingredients.
- Add in the carrots, raisins & nuts.
- Bake1 hour for 8x10 ½ oval pyrex
- 45 min for two 8 in rounds
- 35 for muffins
- Cream Cheese Icing
- 8 oz Phili cream cheese (stick to Phili – don’t buy store brand for this)
- 4 oz butter
- 2 cups confectioners sugar
- 1 tsp vanilla
- Beat till smooth. If you really like icing or want any edging on the cake – double the recipe.
