Grandmas carrot cake

Ingredients

  1. 2 cups flour
  2. 1 0.5 cup sugar
  3. 4 eggs
  4. 4 carrots, grated
  5. 1 cup oil
  6. 1 cup raisins
  7. 1 cup chopped walnuts
  8. 1 tsp. vanilla
  9. 1 tsp. baking powder
  10. 1 tsp. baking soda

Steps

  1. 350* for 1 hour
  2. Beat sugar & eggs till frothy. Add the rest of the wet ingredients. Beat in dry ingredients.
  3. Add in the carrots, raisins & nuts.
  4. Bake1 hour for 8x10 ½ oval pyrex
  5. 45 min for two 8 in rounds
  6. 35 for muffins
  7. Cream Cheese Icing
  8. 8 oz Phili cream cheese (stick to Phili – don’t buy store brand for this)
  9. 4 oz butter
  10. 2 cups confectioners sugar
  11. 1 tsp vanilla
  12. Beat till smooth. If you really like icing or want any edging on the cake – double the recipe.
