Apple Acorn Squash

For a flavor filled and easy dish, you will love this delicious and nutritious combination.


  1. 2 small Acorn Squash
  2. 1 apple, chopped
  3. 1 onion, chopped
  4. 1 cup sliced mushrooms
  5. ½ cup fresh basil leaves, minced
  6. 1 cup fresh bread crumbs
  7. olive oil
  8. sea salt
  9. fresh ground pepper


  1. Pierce acorn squashes with fork and place in microwave dish. Microwave until tender. Cut in half and scoop out seeds.
  2. While squash is cooking, saute apple, onion, basil and mushrooms in olive oil. Add the breadcrumbs and mix.
  3. Fill each cooked acorn squash half with apple mixture, drizzle with olive oil and bake 10 minutes in 450 degrees oven. Season with sea salt and fresh ground pepper.
