Apple Acorn Squash
(recipe, Bluebird Farmers Market & CSA)
For a flavor filled and easy dish, you will love this delicious and nutritious combination.
- 2 small Acorn Squash
- 1 apple, chopped
- 1 onion, chopped
- 1 cup sliced mushrooms
- ½ cup fresh basil leaves, minced
- 1 cup fresh bread crumbs
- olive oil
- sea salt
- fresh ground pepper
- Pierce acorn squashes with fork and place in microwave dish. Microwave until tender. Cut in half and scoop out seeds.
- While squash is cooking, saute apple, onion, basil and mushrooms in olive oil. Add the breadcrumbs and mix.
- Fill each cooked acorn squash half with apple mixture, drizzle with olive oil and bake 10 minutes in 450 degrees oven. Season with sea salt and fresh ground pepper.
