She’s a Character and Orange/Pineapple Salsa

If you’ve ever seen the show ‘The New Adventures of Old Christine,’ you could be getting a glimpse into my persona and watching a funny show with talented actors. Greg, my husband, often turns to me and laughs with a knowing smile that I am much like Julia Louis-Dreyfus’ character. Not in looks but in her kooky antics and situations that often she finds herself in (or rather places herself in). I would actually describe myself as similar to her in real life as well, from the few interviews and appearances that I have seen. Thinking back, my sassy side is similar to her character Elaine from Seinfeld. Greg has commented about that in the past too. If you could blend all 3 of those personalities together that’s kind of who I am. I adore her and the characters she portrays which is weird because I am self-deprecating. I don’t necessarily see that as a bad thing, it could make me endearing (or crazy). I don’t know if anyone else would make this call besides Greg and my family but I don’t know that I would trust someone to know me as fully as they do. I wasn’t really going anywhere with this, just making a statement. Is there anyone, a character or actual person, which others have compared you to?

I’m tackling pierogi today…I know I am late, pierogi day was last week. I was surprised to find that in the blog world more people called them dumplings, which they are but even this Midwestern/Northeastern girl knows to call them pierogi. I don’t have a Polish grandmother….although Greg told me he was Polish when we first met and it turns out, he was making it up and had no idea. He’s actually Irish and Dutch. (I think.)

Anyway, I didn’t learn how to make these tasty potato/cheese-filled pockets of joy from anyone. I had my first one in a college dining hall with peppers and fell in love. Unfortunately, from there on out, I only got the ones found in the freezer section. By the way, they don’t have to have cheese and potatoes, that’s just what I want. These little babies will take over 2 hours to prepare. I am warming-up for this event by pointing and flexing my fingers vigorously, this is a cooking marathon people. I’m pretty sure mishaps will ensue, that’s kind of my thing, especially when I am being careful not to screw something up. I think Greg will be disappointed if flour and potatoes aren’t all over the floor, cabinets and ceiling when he gets home. I am really hoping that doesn’t happen. After cleaning the other day, my cayenne pepper fell from the cabinet all over the stove and floor while I was making popcorn. Blunders like that are normal occurrences with me and no, I’m not clumsy (not super-clumsy anyway).

A few weeks ago I made salsa with orange as a side for a quiche. I would like to share this. I am going to add pineapple next time and will make it for fish, perhaps tilapia.

Orange/Pineapple Salsa

2 tsp lime juice
3 medium tomatoes, seeded and diced
1/2 jalapeno, minced
salt (to taste)
¼ red onion, diced
2 tbsp cilantro, chopped
¼ cup orange, pulp pieces chopped into bite-size pieces
¼ cup pineapple, bite-size pieces-optional

Combine all ingredients in a bowl and chill for 30 minutes or more. Serve with fish or whatever you wish.
